Passionfruit Breakfast Cheesecake

Cheesecake? Yes, seriously. Cheesecake for Breakfast!
Well, this is a recipe for anytime of day but I love making this for breakfast to tick off prebiotic goodness, protein and wholegrains in one go.
Ingredients and Method
2 cups of your favourite granola or toasted oats. I use @nodo baked blueberry granola (delicious and packed with macadamia nuts and pecans!). If using oats you may want to add (you may want to add 1/3 cup honey for some sweetness.
1/2 cup almond meal
3 tbsp Fertile Gut
40g melted Nuttlex or butter
2 tbsp apple purée (I put in a mix of apple, pear and cinnamon).
Mix all of these together and pop into a round cake pan to bake at 160 degrees C for 10-15 min.
In a food processor mix:
250g cream cheese
300g your favourite yoghurt (I use a sweetened five am vanilla bean but Greek yoghurt goes well too!)
1 tsp Vanilla
3 tbsp honey or maple syrup
Once mixed stir in 3 beautifully ripe passionfruit -pulps and seeds.
Bake for 25-30min at 160.
Top with some extra granola and yoghurt for a taste sensation!
