Apple pie for breakfast - but make it gut-friendly!
Prep it in a few minutes the night before and wake up to a breakfast packed with plant diversity, fibre and protein to nourish your gut microbes and keep you satisfied through the morning.
We’ve used Bask & Co GF Porridge here, but you can absolutely swap this for your favourite oats if you prefer.
The combination of apple + chia + wholegrains + Gut + Protein means you’re getting multiple plant foods alongside protein and prebiotic fibre - because breakfast is a pretty great place to start feeding your microbes.
No oven. Minimal prep. Maximum cosy apple-pie energy.
Apple Pie Overnight Breakfast | Serves 1
Ingredients • 40 g Bask & Co GF Porridge or 40 g oats • ½ apple, grated • 150 mL milk of choice • 80 g Greek yoghurt • 30 g Fertile Gut Gut + Protein Vanilla • 10 g chia seeds • 1 tsp cinnamon • 1 tsp vanilla extract • 10 g honey
Optional toppings • Diced apple • Chopped walnuts • Extra cinnamon
Method
Add the porridge (or oats), grated apple, milk, Greek yoghurt, Gut + Protein, chia seeds, cinnamon, vanilla and honey to a jar and stir well.
Cover and refrigerate overnight, or for at least 4 hours.
In the morning, give it a good stir and add a splash of milk if you prefer a looser consistency.
Top with diced apple, walnuts and an extra sprinkle of cinnamon.
