Almond Flour Protein Blondies: golden, fudgy, gluten free, and packed with

protein. The kind of thing you make once and suddenly everyone in your house

wants the recipe.

Ingredients

(Makes 9 squares)

  • 130g almond flour
  • 40g Fertile Gut + Protein Vanilla Protein Powder
  • 1 egg
  • 1 Tbsp Fertile Gut Microbiome Essentials
  • 60g almond butter
  • 60ml maple syrup
  • 5g vanilla extract
  • 3g baking powder
  • Pinch of salt
  • 50g white chocolate chips
  • 1/c cup almond milk

Method

  1. Preheat oven to 175°C. Line a small square baking tin (20x20cm) with baking paper.
  2. In a large bowl, whisk together eggs, almond butter, almond milk, maple syrup, and vanilla extract until smooth.
  3. Add almond flour, Vanilla Protein Powder, Microbiome Essentials, baking powder, and salt. Stir until combined.
  4. Fold in 2/3 of the white chocolate chips.
  5. Pour into the prepared tin and spread flat. Scatter remaining white chocolate chips over the top.
  6. Bake for 20–22 minutes until golden on top and a skewer comes out mostly clean (a little fudgy is perfect).
  7. Allow to cool completely in the tin before slicing into 9 squares.
  8. Store in the fridge for up to 5 days.
