This is one of our favourite pancake recipes. What a gut nourishing way to start your day! Your gut microbiome will thank you for enjoying these moist, melt in your mouth delights.
Add all of the ingredients to a medium sized mixing bowl and use a whisk to combine. Set aside for 5 minutes to allow the batter to thicken slightly.
Heat a lightly oiled frying pan over a medium-high heat.
Pour 1/4 cup measuring cup of batter into the hot pan and cook until bubbles form and the edges are slightly dry, about 2 to 3 minutes.
Flip and cook until browned or golden on the other side.
Transfer to a wire rack to cool.
Repeat with the remaining batter.
Serve with yoghurt, fresh blueberries and a drizzle of maple syrup.
