Ingredients
1/2 cup coconut oil*
1/4 - 1/2 cup honey*
1 cup oats
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup slivered almonds
1/4 cup activated buckwheat
1/2 cup chocolate chips
1 tsp vanilla extract
1/2 tsp cinnamon
4 tablespoons Microbiome Essentials
Method
Preheat the oven to 160 degrees Celsius, grease an ovenproof baking tin (I use a 20 x 20 cm tray) and line with baking paper.
In a saucepan, heat coconut oil and honey until melted. Remove from heat and allow to cool slightly. In a bowl, mix together oats, pumpkin seeds, sunflower seeds, slivered almonds, activated buckwheat, chocolate chips, cinnamon and Microbiome Essentials.
Add in coconut oil and honey mixture (make sure it has cooled down enough so not to melt the chocolate chips) and the vanilla extract.
Stir together until all ingredients are well combined*. Place mixture into the prepared tray and press down firmly.
Bake for 25-30 minutes or until golden on top. Remove from the oven and allow to cool completely before cutting into slices.
*More coconut oil and honey can be added if mixture is too dry
